另据研究表明：正常大脑细胞存在一定量的磷酸酶物质，但癫痫患者的大脑中严重缺乏这种酶，而豆芽中富含硝基磷酸酶物质，故进食豆芽能补充磷酸酶不足而缓解病情，这是癫痫的饮食原则。

酸性食物提供给人体丰富的维生素C、维生素B6等，有利于神经递质的合成，从而弥补癫痫患者，特别是原发性癫痫患者的一些神经递质的缺乏，减少癫痫的发作。癫痫病人能吃什么?传统食物中酸性食物大致有：花生、核桃、猪肉、牛肉、鸡、鸭、鹅、鱼、虾、蛋类等等。癫痫患者可以据此适当调整自己的食谱，合理搭配。另外有研究表明：癫痫的发作是由于神经过度放电所致，而当人体短时间内过量地摄入食盐后，高浓度的钠盐可致神经元过度放电，从而诱发癫痫，故人们常津津乐道的“少盐多醋”的养生之道，对癫痫患者依然适用，这也是癫痫的饮食原则之一。
